STEAMED MUSSELS WITH APPLE & GINGER BROTH
Always time for comfort food. Soups, stews, broth or maybe a big bowl of Steamed Mussels!

This recipe for mussels is simple but tasty!
150ml of Apple Juice
150ml of Cream
½ tsp of Ground Ginger
½ tsp of Curry Powder
2 Shallots, finely diced
1tsp of Chives, finely chopped
1tsp of Black Peppercorns, freshly ground
Pinch of Salt
Squeeze of Lemon Juice
Places all the ingredients into a heavy bottomed pot.
Cover with a well fitting lid and steam on a high heat, shaking every so often until all the shells are open. Discard any mussels which have not opened. Divide evenly into bowls and sprinkle with chives.
